Course Overview

Pastry & Bakery trains learners in professional baking and pastry production. The course is practical and prepares students to work in bakeries, hotels, pastry shops, cafés, or start their own baking business.

Course Duration
  • 3 – 6 months (artisan / short course)

  • 6 – 12 months (certificate level with attachment)

  • Baking principles & measurements

  • Bread making & dough handling

  • Cakes, sponges & gateaux

  • Cookies, biscuits & pastries

  • Icing, decoration & sugar craft

  • Pies, tarts & desserts

  • Bakery equipment operation

  • Food hygiene, safety & sanitation

  • Costing, pricing & small bakery management

Entry Requirements
  • KCSE certificate (any grade)

  • KCPE accepted in many colleges

  • Suitable for school leavers & adult learners

Certification Levels
  • Artisan Certificate in Pastry & Bakery

  • Certificate in Pastry & Bakery
